Lauren Jones Cooks | Oh-My-Goodness-Guilt-Free-Pancakes

Happy hump day!

I hope everyone's week is fantastic!

Well, so much for alternating blog posts to shake things up, as I have now been posting back to back low-cal recipes. Today on my Instagram account (@laurenjonesdesigns) I was asked what diet I follow so I was feeling inspired to share another one of the cool recipes I have recently stumbled upon. I don't follow the same diet plan every day; I like to change things up. I like fast, easy recipes with fewer ingredients - it's an instant gratification thing. So, here is a recipe that is exactly that: fast and easy.

Oh-My-Goodness-Guilt-Free-Pancakes (TWO ingredients!)
1 banana
2 eggs


Are you excited yet? I know I am! Prep time is 5 minutes, cook time is 5 minutes, for an incredibly guilt free, FAST, recipe for delicious pancakes.

Directions:
Mash a ripe banana very well and add in whisked eggs. Next, spray a non stick pan with fat free cooking spray (or coconut oil, whichever you like, but keep in mind coconut oil will give your pancakes a buttery taste and feeling). Then, cook silver dollar size pancakes, about 30 seconds on each side, or until golden brown, and serve! We use a small amount of 100% real maple syrup or agave on our pancakes and top with fresh blueberries.

Lauren Jones Cooks | Satisfy Your Chocolate Cravings Without Compromising Your Waistline

CHOCOLATE! What girl doesn't love chocolate!? I surely can't think of one! But who needs all those calories!? In my quest to find the best, most delicious recipes out there - ones that not only satisfy cravings, but help with cutting calories and ultimately obtaining a slimmer, trimmer waistline - I keep finding oldies but goodies. It's not organic, but to heck with that sometimes. I was perusing the grocery aisle and rediscovered fat-free, sugar-free Jell-O! Hooray! I bought two packs at $.98 each and went home to play in the kitchen. The chocolate Jell-O is amazing! (I haven't yet whipped up the pistachio flavor I also purchased.) All I did was stir it with 2 cups of fat free milk, top it with light whipped cream, and then serve after whipping the 2 easy ingredients and waiting all of 5 minutes. I guess we all know about Jell-O, but I honestly had forgotten about it! Instead of trying to find all sorts of new low-cal diets tricks, why not go back to basics?

Lauren Jones Cooks | Recipes and Low-Cal Treats

Hello again!

Apologies for multiple posts in one day, but remember how I was searching for recipes online, as mentioned in my previous post? Well, it was all to no avail... thus, I created my own quick - delicious - treat.

Here it is - it's SO EASY!

Light & Fit Key Lime flavored yogurt paired with low fat whipped cream. I kid you not, it's insanely delicious (and will hold me over with a lot of flavor but not a lot of calories until dinner)!

Lauren Jones | "The Real Me"

Hey there! Happy Tuesday!

I was browsing around the Internet today, looking up some businesswomen I admire... Sandra Lee, Martha Stewart, Rachel Ray. I needed a fabulous recipe, plus, these women are amazing! They work hard, have great vision, set attainable goals for themselves and truly reach high; plus they always feature a delicious recipe that I need to try at home. They inspire me! My list of inspirational women changes, but I find myself coming back to these three quite often for various reasons. While searching online, I stumbled upon a photo of myself - eek! - and noticed quite a bit of airbrushing and makeup. Eh, not too inspirational. Wow, I look so different online! I have to laugh because yes, it's all in good humor and part of a character that has been played on TV, in movies, or as part of a photo shoot, and with no regrets,  but I grew curious if anyone ever wondered what I look like in "real life". Well, just in case, here it is! "The real me": light makeup, if any at all, except for maybe a stroke of mascara and soft eyeliner, sans foundation. This photo was taken candidly at a friend's wedding and is more of what I "really" look like. I wanted to share this image because there are so many photos circulating the "net" these days, and when I think of the word inspirational, I want to depict a more real version of myself, something honest. Lauren Jones Cooks | Sip

Lauren Jones Cooks is one of my newest projects - and one that I am so passionate about that I cannot wait to share some of it (early) with you!

Sip is a sub category of Lauren Jones Cooks and is all about sipping on the most exciting, did I mention low-cal, drinks imaginable.

Having just returned from Cap Juluca in Anguilla (right next to St. Martin for those wondering where this lovely location is), my sweetheart and I fell head over heels for the delicious hurricanes we were presented with upon our arrival. Delicious to say the least! We ordered them continuously, regretting it when it came to our waistlines, yet enjoying them so much so that we started making them upon our return home. 

This past July 4th, we celebrated with close friends. Of course, hurricanes we at the top of the drink list. We made them according to what I would call one of the more traditional recipes. It's delicious! Here it is:

1 1/2 cups light rum
1 cup pineapple juice
1 cup orange juice
1/2 cup lime juice
1/2 cup grendadine
a pinch of nutmeg
orange or pineapple slice to garnish

Now... as much as I like the taste of this adult beverage, I prefer my drinks on the lighter side, calorically speaking. Thus, I created my own version - even a "virgin" alternative - and I love these renditions even more than the original. See below:

Ingredients:

1/2 cup light rum (optional!)
1 cup water
Crystal Light Fruit Punch Sugar Free Drink Mix
1 cup Diet Ginger ale
a pinch of nutmeg
orange or pineapple slice to garnish

These are ballpark measurements, as I "eye" it and don't really measure the portions because I like my low-cal hurricane to be really tart. I add a lot of Crystal Light Fruit Punch mix and often skip the rum altogether. Pour your low-cal hurricane over ice and it's refreshing, not to mention delicious, on a warm summer day!
